Scrumptious Sausage Rigatoni

This is one of our favorites. It is on the monthly dinner rotation! It is easy to make, but full of flavor. Pair this with some dinner rolls and you'll feel like you're eating at a 5 star restaurant!
THE DETAILS:
16oz rigatoni pasta
1 cup reserved pasta water
2 tablespoons olive oil
1 pound Italian sausage, I use sweet or mild
3 minced garlic cloves
1 teaspoon of Italian seasoning
1/2 teaspoon dried basil
1/2 teaspoon oregano
1/2 teaspoon fennel seeds
1 6oz can of tomato paste
1 cup of chicken broth
1 cup of heavy cream
1/4 parmesan cheese, grated so it melts smooth
Salt and pepper to taste
YOUR ASSIGNMENT:
Cook the rigatoni according to the package, drain, but reserve 1 cup of the pasta water.
While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the sausage breaking into small pieces.
Once done, add the garlic, Italian seasoning, basil, oregano and fennel seeds. Mix thoroughly with the sausage.
Add the tomato paste and cook a few minutes more. Stir in the broth and simmer until it starts to reduce.
Add the heavy cream and bring to a simmer. Stir in the parmesan cheese.
Combine the cooked pasta with the sausage and sauce. Stir to coat the noodles well. If you need more liquid, gradually pour the pasta water into the pan.
Season with salt and pepper to taste. Garnish with more parmesan and parsley if desired.
