Cheddar Bay Biscuit Casserole

I have seen this recipe all over social media, so I thought I'd give it a try. The first one I made from a content creator was bland, so I made it my way the second time and it was so much better! This is super easy to make, full of flavor, and inexpensive. It's a win, win!


THE DETAILS:

  • 1 stick of butter

  • 1 box of Red Lobster Cheddar Bay biscuit mix

  • 2 cups of milk

  • 4 cups of shredded chicken

  • 2 cups chopped veggies of choice (optional, I use corn)

  • 1 tablespoon of garlic powder

  • 1 tablespoon of onion powder

  • 2 teaspoons of pepper

  • 2 teaspoons of parsley

  • 2 cups of chicken broth

  • 1 10oz can of cream of chicken soup


YOUR ASSIGNMENT:

  1. Preheat your oven to 350 degrees. While it is preheating, add the stick of butter to a 9x13 pan and place in the oven as it preheats to melt the butter.

  2. In a small mixing bowl, mix the cheddar bay biscuit mix with 2 cups of milk AND the seasoning packet that comes with the biscuits. Set aside.

  3. You can use a rotisserie chicken, but I put 3 chicken breasts in the crockpot for a couple hours and then shredded them...........place the shredded chicken over the melted butter covering the bottom of your pan.

  4. Sprinkle your veggies over the chicken (if using).

  5. Sprinkle the garlic powder, onion powder, pepper and parsley on top of the chicken and veggies (again, if using).

  6. Pour the biscuit mix over the top. DO NOT MIX IT!!!!!!

  7. In the same bowl, mix the chicken broth and cream of chicken soup together. Pour over the top of the biscuit mixture. AGAIN, DO NOT MIX IT!!!!!

  8. Bake for 45-60 minutes (will be brown on top and a little jiggly). Let rest for 10 minutes before serving.
